
A couple of weekends ago, I had the pleasure of making a birthday cake for a baby
boy’s first birthday. When his mom mentioned that his face would light up whenever
he saw Thomas the train, I knew exactly what kind of cake I wanted to make.
She requested a carrot cake, so that he could have a little piece too on his birthday,
which was actually also Mother’s Day. How perfect is that? I followed a recipe off
one of my favourite food blogs, Smitten Kitchen, and used maple cream cheese for
the frosting.
Michael’s mom called me a couple of days later to let me know that he adored the
cake and even polished off a whole slice by himself. That’s one way to get kids to
eat their veggies!
